Marble Pound Cake Recipe for Afternoon Tea

Last Mother’s Day, I made little afternoon tea boxes and gave them away. It had cream scones, currant scones, jam and cream, and more. This marble pound cake was my second favourite among the items in the box, after the currant scones.

I am sharing the recipe below, adapted and slightly changed from the Old Fashioned Pound Cake recipe from the Baking and Pastry book by the Culinary Institute of America.

Marble Pound Cake

Makes around 425g of batter. Enough for a 5×3″ mini loaf pan. Small enough to be baked in the air-fyer!

Ingredients

  • 85g cake flour
  • 18g cornstarch
  • 3g baking powder
  • 1g salt
  • 75g softened butter, unsalted
  • 85g sugar
  • 1 large egg
  • 1 large egg yolk
  • 85g cream
  • 1tbsp white vinegar
  • 43g dark chocolate, chopped

Method

  1. Preheat oven to 180C. Line a 5×3″ mini loaf pan with baking paper.
  2. Place the dark chocolate pieces in a microwave-safe bowl and melt in the microwave. Make sure not to overheat. Try heating for 30 seconds initially and checking from there. This may vary depending on how cold your chocolate started out. Set aside to cool at room temperature.
  3. On a small bown, mix the cream and white vinegar and let stand until needed.
  4. On a separate bowl, cream your butter and sugar together using a whisk. You may use your electric mixer but if making just the small quantity above, this is definitely doable by hand. Mix until the butter lightens in color and is fluffy.
  5. Pour in your cream and mix.
  6. Sift your dry ingredients (flour, cornstarch, baking powder, salt) into the butter mixture. Mix with your whisk just until combined.
  7. Take 1/3 of the batter and mix it with your melted chocolate.
  8. Take your lined mini loaf pan and place half of the plain batter. Place half of the chocolate batter on top. Layer the rest of the plain batter and then the rest of the chocolate batter again. No need to be careful with this one since we are going for a random mabling effect.
  9. Grab one chopstick or use the handle of a spoon and swirl around the batter to create a marbling effect.
  10. Finally, bake in 180C oven for 22-25 mins or until a toothpick insterted into the center comes out clean.
