This one-pot bolognese is for those days when you don’t feel like spending too much time over the stove, and yet you get dinner that looks like you did. This recipe is essentially putting everything in a pot and simmering until cooked.


You can even put (or omit) whatever veggies you want. Broccoli, cauliflower, eggplant and shredded carrots would be lovely in this dish. I wouldn’t say no to a change of meat either. Minced pork or chicken or a combination will work just as well. I may even sometimes tip in some red wine for that extra depth. I guess what I am saying is, you can chuck out this one-pot bolognese recipe below and make it your own!
One-Pot Bolognese
A quick and easy one-pot hearty dinner, with your meat, starch and veggies ready in under 20 minutes.
- 400 g canned tomatoes ((1 can))
- 300 g minced beef
- 200 g angel hair pasta (, cooks in 2 minutes!)
- ⅓ cup frozen peas
- ¼ cup spinach leaves
- 2 pcs brown mushrooms (, torn to smaller bits)
- 2 tbsp tomato paste (, flavoured with italian herbs would be great)
- 1 tbsp pesto sauce
- 1 tbsp oil
- grated parmesan cheese ( as desired)
- salt & pepper ( to taste)
Heat oil in saucepan. Add the minced beef and cook until browned.
Add canned tomatoes, peas, mushrooms, tomato paste and pesto sauce.
Simmer over medium heat then add the pasta.
Stir to make sure the pasta is not clumped together. Add some water if needed, to cover the pasta. Simmer until pasta is cooked.
Adjust seasoning with salt and pepper. Stir in spinach leaves.
Serve with grated parmesan.
